Heat Wave

Its been so hot this summer. Here in Toronto we are on our fourth heat advisory of the season. So out of character for the Great White North. Heat and humidity, a fantastic combo for frizzy hair and zapping energy . In addition to drinking lots of water to beat the heat, there has been lots of frozen treats…way too much ice cream. Not great for the waistline, but oh so tasty. This morning I am beating the heat with a cooling, energizing smoothie bowl. Almost as good as ice cream for breakfast.

Strawberry Peach Smoothie Bowls

1 cup frozen sliced strawberries

½ cup frozen sliced peaches

¾ cup unsweetened vanilla flavored almond milk

½ tsp almond extract

1 scoop vanilla protein powder, optional

Optional toppings- chia seeds, chopped almonds, pomegranate seeds, sliced fresh strawberries

Place fruit in a blender (high speed type works best) and blend on low until fruit is broken into small bits. Add almond milk, almond extract, and protein powder, if using and blend on low, scraping down sides of blender if necessary, until mixture comes together and resembles soft serve ice cream. (if mixture is too thick, add a few tablespoons of almond milk or water) Transfer to a bowl and top with chia seeds, nuts and sliced fresh fruit if desired.
